Hi, I have a silly question…do all these sauces need to be refrigerated after they are made? I would love to make a few of these, put them in little jars, and give them to friends and family as Christmas presents, but Iโm not sure how that would work out.

For food safety’s sake, I would say, yes, they need to be refrigerated. I am not a canner, though, so it could be possible to process these in either a regular or pressure canner to make them shelf-stable in jars. I would think you would treat them like jam, especially the ones that don’t contain dairy. Here are the USDA guidelines for canning http://nchfp.uga.edu/publications/publications_usda.html , and I know there are many canning groups on fb where you can ask questions. Canning Granny is a very popular one. Any of them should be fine for a few hours though, so if you fill the jars and then are meeting up with people at a party, you can just hand them to them and tell them to refrigerate them when they get home.
