You don't need eggs to make pancakes. In fact, they can make your pancakes rubbery. No eggs here: this recipe cooks up fluffy and tender!

Here's all you'll need to make them: self-rising flour, milk, oil, sugar, and optional spices.

First, you'll sift (or whisk) your dry ingredients together in a bowl: self-rising flour sugar (optional) spice

Then, mix milk and oil together. Fold into the dry ingredients. If the mixture seems too dry, add a touch more milk.

Cook on lightly greased hot  griddle or pan until dry around edges. Flip and cook the other side. Makes 3 pancakes. The perfect serving for one.

To add mix-ins like blueberries, nuts, or chocolate chips, sprinkle them on the before flipping each pancake rather than trying to mix them into the batter.

Vary the flavor of the batter by adding your favorite spices, orange zest, or lemon zest. So many ways to switch up the flavor you'll never have to eat the same kind twice.
