Easy Mint Chocolate Sheetcake Recipe
Super Moist and Minty
This cake is basically an old-school chocolate mayonnaise cake with mint oil added. Thanks to the oil in the mayonnaise, it bakes up moist and luscious, and it stays soft even when refrigerated.
Things to love about this cake: >No milk makes it a very chocolatey cake >easy mixing method you can make with a hand mixer or stand mixer >no stacking of layers. Frost it right in the pan!

Whip eggs and sugar to the ribbon stage. Beat in mayonnaise and mint. Alternate dry ingredients with boiling water. Bake at 350F for 40-45 minutes.
Frost directly in the pan with mint frosting. I developed a mint Swiss buttercream specifically for this chocolate mint cake. \ You can get that recipe by clicking below.
I think you will really love the deep chocolate mint flavor and most crumb of this cake. For a sleeker look, you could also choose to glaze it with dark chocolate ganache flavored with mint oil.
