This cake is basically an old-school chocolate mayonnaise cake with mint oil added. Thanks to the oil in the mayonnaise, it bakes up moist and luscious, and it stays soft even when refrigerated.

all purpose flour cocoa powder       kosher salt baking powder sugar                            eggs mayonnaise peppermint oil or extract boiling water

Ingredients

Whip eggs and sugar to the ribbon stage. Beat in mayonnaise and mint. Alternate dry ingredients with boiling water. Bake at 350F for 40-45 minutes.
