The Best Creme Brulee Cheesecake

(or Cheesecake Creme Brulee)

The magic of this recipe is that it is a combination of two decadent, creamy desserts. Whether you make it as creme brulee OR as a cheesecake with a crust, you will be very, VERY happy.

Here's what you need to make both the crust and the batter.

First, thoroughly mix all the crust ingredients together. Dump them into a push-pan or springform, press them flat, and bake until set and lightly browned.

No mixer needed for the batter. Soften the cream cheese, and mix all the ingredients together. Start with the densest ingredients and stir the cream in last.

Mixing the densest ingredients together first minimizing lumps. Even so, strain your batter before pouring it into your pan. Pop bubbles with your torch, and bake in a water bath.

Bruleeing the whole top makes slicing difficult, so brulee sugar separately and use it to decorate the edges. Use your torch to brulee the top of the cheesecake without sugar.

Note the glorious texture of the cheesecake. I formulated the batter to be as close to creme brulee texture as possible while still being able to slice it.

I've mostly been talking about the creme brulee cheesecake, but if you bake in ramekins in a water bath, you can then brulee the tops with sugar and serve cheesecake creme brulee.
