Penne alla Vodka  made with Jarred Sauce

Here's what you'll need to make this shortcut vodka sauce. I bet you have most of these ingredients on hand!

Ingredients

2 T Olive oil         1 jar of your favorite pasta sauce         pepper flake, to taste 1/4 cup vodka           4 oz cream cheese 2 oz Romano Cheese       1 T Balsamic vinegar

Heat the oil, and let the pepper flake sizzle to infuse the flavor. I recommend between 1/4-1/2 teaspoon.

Add the jarred sauce, and then pour the vodka into the jar. Swirl it around to thin out the remaining sauce in the jar, and pour it all into the pan.

Whisk in the cream cheese and grated Romano cheese until nice and smooth. Add the balsamic to brighten the flavor just a bit.

Cook the pasta for about half the time called for. Add it to the sauce along with about 1/2 cup-3/4 cup of the pasta cooking water.

Bring the pasta and the sauce to a boil and stir vigorously until the sauce has reduced to its original consistency and the pasta is cooked.

For an extra-silky consistency, add a bit more olive oil and stir it in to emulsify in the boiling sauce.
