The Best Christmas Bar Cookie Ever
These fantastic cookies are made in 3 parts: a sable crust coconut pecan filling tart lemon glaze The combination is absolute perfection.
For the crust, you'll cream together butter and sugar. Then cream in an egg and blend in flour, salt, and a little vanilla. You can use a hand mixer, stand mixer, or even make by hand.
Press dough in an even layer in a 9" x 13" pan. Bake at 350F for about 15 minutes, or until it is firm and just starting to turn golden.
Mix together eggs, brown sugar, coconut, chopped pecans, flour, baking powder, salt, and vanilla. Spread on top of the crust, and bake for about 20 minutes, until puffed and firm around the edges.
Whisk together powdered sugar, (optional) lemon zest, and lemon juice into a fairly thin glaze. Spread onto cooled filling and allow to dry completely.
With a sharp knife, cut into bars of whatever size you like. I prefer smaller, square bars, but there is no wrong way to cut them.
