>2 oz unsalted butter
>8 oz granulated sugar
>1.5 oz molasses
>1 teaspoon kosher salt (Morton's)
>6 oz heavy cream
>1 teaspoon vanilla
>coffee extract (optional)
Add the cream.
Bring to a boil and cook, stirring frequently, until the mixture reaches 230-232F.
Remove from heat and stir in vanilla and optional coffee extract.
For a milder molasses flavor, you can substitute dark brown sugar for the granulated sugar and molasses.
I would not use light brown sugar as the flavor will not be deep enough.
