Butterscotch Ice Cream Sauce Recipe

Rich, Real Butterscotch Flavor

pastrychefonline.com

Here's what you'll need to make this delicous sauce. See the next slide for amounts.

Ingredients

>2 oz unsalted butter >8 oz granulated sugar >1.5 oz molasses >1 teaspoon kosher salt (Morton's) >6 oz heavy cream >1 teaspoon vanilla >coffee extract (optional)

Melt the butter, then add the sugar, molasses, and salt. Cook together for 2 minutes over medium heat, stirring constantly.

Add the cream. Bring to a boil and cook, stirring frequently, until the mixture reaches 230-232F. Remove from heat and stir in vanilla and optional coffee extract.

Store in the fridge, and rewarm it to serve. It's great on vanilla ice cream or nutty ice creams like butter pecan or pralines and cream.

For a milder molasses flavor, you can substitute dark brown sugar for the granulated sugar and molasses. I would not use light brown sugar as the flavor will not be deep enough.
