The Best Tomato Soup Recipe

with Cajun Spices

Ingredients

vegetable oil flour onions, celery, bell pepper (Trinity) Cajun seasoning smoked hot paprika salt and pepper canned whole tomatoes vinegar sugar

First, make a roux by cooking oil and flour together until light tan in color. Then add your chopped trinity.

Add spices, and cook and stir together over medium heat for about 10 minutes, or until the vegetables are soft.

Stir in canned tomatoes and crush up a bit with the back of a spoon. Then blend with an immersion blender until as smooth as you like.

Simmer about 20 minutes, then taste and adjust the seasonings. Add more spice if you want it, and brighten/balance the flavors with some sugar (I used coconut sugar) and some vinegar.

Tip: to get beautiful cream swirls in your soup, whisk some heavy cream with a pinch of Cajun seasoning until barely thickened. Then, it will float on top when you drizzle it on top of your soup!

Other garnish ideas include crisp bacon, tiny squares of grilled cheese sandwich, croutons, crackers, or even more sauteed trinity. Serving over rice is also a tasty option.
