Traditional Red Velvet Cake with Ermine Frosting

With its bright red crumb and fluffy white frosting, Southern red velvet cake is the perfect celebration cake for the holidays.

Here's what you'll need to make this classic cake recipe. Notice it's leavened with baking soda and vinegar.

Sift together into a bowl: >all-purpose flour >cocoa powder >baking soda Set aside.


In a medium-sized bowl, whisk together: >Buttermilk >Red food coloring >Vanilla extract Set aside.


Whip together sugar, oil, and salt. Add eggs, one at a time. Alternate adding dry ingredients and buttermilk mixture, scraping the bowl as necessary.


Whisk the vinegar in last. The reaction between the vinegar and baking soda creates bubbles and is what makes this cake rise. Once the vinegar gets added, get the batter into the oven quickly.


Divide the batter between your prepared pans, and get them into the oven, ASAP. The heat from the oven will help to capture those bubbles so your cake rises with a light, velvety crumb.


Allow cakes to cool for 10 minutes before turning out onto racks to cool completely. Frost with ermine frosting, which is likely the original frosting for this cake and is included in the recipe.
