Make onion jam & pickled onions in advance.Onion jam: onions, s&p, onion soup mix, water, coffee, brown sugar, vinegar, Worcestershire saucePickled onions: red onion, sugar, vinegar, water, salt
On burger day, assemble all your ingredients, cook your patties on a griddle or on a cast-iron skillet, and don't forget that all-important cheese skirt!
Place 2 oz "meat balls" onto the hot skillet and smash down all over really hard to make a very thin patty that cooks quickly.Flip and then add the cheese. Put a lid on the pan so the cheese melts.
As it melts, cheese will pool around the burger, crisping and caramelizing. That's the "cheese skirt."Once the burger is done, scrape it and the cheese skirt up for serving. So good!
Add pickled onions on top of or between the patties. There's no wrong way, but use lots. The ZING & crunch of sweet-tart onion provides a nice contrast to all the cooked onion.
