The Best Caramel Frosting Recipe

Most southern caramel cakes call for a poured icing that sets up kind of like fudge. That's fine if you don't want to pipe it, but if you want fluffy, pipeable frosting, stick with me!

Here's what you'll need to make this frosting. You can use heavy cream, but if you can't find it, evaporated milk works great.

Before you can make caramel frosting, you have to make caramel. Caramelize sugar--take it dark. Stop the cooking with evaporated milk or cream, and stir until smooth.

Pour the hot caramel into the bowl of your stand mixer. Stir in one stick of butter and some vanilla. Refrigerate until cool but not cold.

Whip in powdered sugar and then cool butter, a piece at a time, until the frosting is light and fluffy. Then you can frost your cake.
