Spicy Fiesta Chicken Recipe

Made in Your Instant Pot

Many fiesta chicken recipes are made in a slow cooker. When you can't wait, you can make this Instant Pot version in about an hour.

Here's what you'll need to make this spicy, creamy, and satisfying dip (or taco filling or burrito filling or quesadilla filling...)

If you'd like to up the fiber (and you like them), feel free to add a can of rinsed and drained black beans. Pinto beans would also work well.

Brown chicken in fat on saute. Remove chicken, and add Ro-Tel and water. Add chicken back in along with the rest of the ingredients.

Put lid on Instant Pot and set to 20-30 minutes on high pressure (30 minutes if chicken is frozen). Allow 15 minutes natural release before releasing manually.

Release lid carefully, and remove and shred chicken. Meanwhile, reduce the juices on saute until thick. Stir chicken back in to heat through and serve as desired.
