Shoofly pie is a "desperation pie."
This one is based on an old-school pantry staple, molasses.
In fact, the filling is just molasses, hot water, baking soda, and an egg.
Line your pie pan and freeze it. Then make your streusel by rubbin the butter into the flour, sugar and salt until the mixture is sandy and no large pieces of butter remain.
Top the pie with a thick, even layer of the rest of the streusel. Bake the pie for 15 minutes at 400F, then reduce the heat to 350 and bake until puffed and firm on top.
