"Wet Bottom" Shoofly Pie

Shoofly pie is a "desperation pie." This one is based on an old-school pantry staple, molasses. In fact, the filling is just molasses, hot water, baking soda, and an egg.

The pie is made in 3 parts:  >a pie crust that you can make yourself or buy >the molasses filling >a ton of streusel

Here's what you'll need to make this homey and comforting molasses pie. Amounts are on the next slide.

9" pie shell, frozen 1 c flour            1 c brown sugar 3 Tbsp butter    3/4 c molasses 1/2 c hot water 1/2 tsp baking soda 1/4 tsp salt             1 egg

Ingredients

Line your pie pan and freeze it. Then make your streusel by rubbin the butter into the flour, sugar and salt until the mixture is sandy and no large pieces of butter remain.

Whisk together the molasses and hot water. Then whisk in the salt and baking soda. Lastly, whisk in the egg until the mixture is well-combined.

Whisk about half the streusel mixture into the molasses mixture until completely combined. Pour the mixture into the frozen pie crust.

Top the pie with a thick, even layer of the rest of the streusel. Bake the pie for 15 minutes at 400F, then reduce the heat to 350 and bake until puffed and firm on top.
