Choose your pasta shape. I like cavatappi.Boil pasta for about half the time called for on the package. You want it to still be very firm.It will finsih cooking in the oven.
Melt butter and add spices. Let sizzle for a few seconds.
Add the flour and cook for a minute or two.
Add milk, and bring to a boil to thicken.
You have just made a spiced bechamel.
Stir in sour cream, cream cheese, and the grated cheeses. Now you have a spiced mornay sauce.Stir in pasta and a little of the cooking water.Pour into a baking dish, top as desired, and bake.
