Panna cotta is an Italian dessert that loosely means "cooked cream."It's made by setting sweetened and flavored cream and/or milk with gelatin.Serve in containers or unmolded onto plates.
– 1 1/4 cups whole milk
– 2 teaspoons gelatin
– pinch of salt
– 2 oz sugar
– 3 oz dark chocolate (I used 70%)
– 1/2 teaspoon vanilla paste or extract
– 1 cup heavy cream
Add half the cream. Whisk over an ice bath to cool.
Whip rest of cream until thick. Fold in gently but thoroughly, and pour into molds.
Chill until set.
You can make panna cotta without all the chilling and whisking, but you will end up with a "slick" rather than creamy panna cotta. To get the best texture, it's worth following all the steps!
