The Best Chocolate Guinness Cake Recipe
The Cake I Made for Anthony Bourdain
This recipe makes one thick layer or two thinner layers if you prefer a layer cake. It's easy to make with just a whisk and a bowl. No mixer needed! Here's what you'll need to make it.
all purpose flour sugar brown sugar cocoa powder instant coffee baking powder baking soda salt butter eggs Guinness or other stout sour cream
Melt butter with beer. Add salt and espresso powder. Whisk in sugars and sift in the cocoa powder.
Whisk cocoa powder in. Whisk togehter eggs and sour cream and whisk that into the batter. Whisk in dry ingredients.
Pour into prepared pan. I like to use a push pan, because it makes the cake easy to unmold. Wrap while warm to keep moist.
Some people like to frost stout cake with cream cheese or Bailey's frosting. I developed a burnt caramel buttercream that marries beautifully marries with the cake. Get that recipe below.
This cake was the signature cake at the restaurant I worked at. It is truly the best chocolate stout cake ever.
It was my honor to make this cake for Anthony Bourdain once. He deemed it "very good," and he was not a dessert person.
