Cajun-Style Great Northern Beans Recipe

This Great Northern Beans recipe is a play on red beans and rice.  The white beans cook up super creamy and have so much flavor. You may just like this version better than the original!

Start with the Cajun trinity of onions, celery, and bell pepper. Add herbs and spices, beans, and vegetable broth. Use bacon if you're not a vegetarian!

Speaking of bacon, chop 4 oz and cook until crisp. Pour off all but 2 Tablespoons of the fat and use that to cook your vegetables. Set the bacon aside for later.

Add the chopped trinity and cook until the vegetables begin to soften. Add the garlic after about five minutes.

Add in your herbs and spices: Cajun seasoning, hot smoked paprika, bay leaves, dried thyme, and dried oregano.

Add vegetable broth (or vegetable base and water), bring to a boil, and then simmer until the beans are tender. You may have to add more liquid during cooking. Stir in the bacon at the end of cooking.

Once the beans are cooked through and creamy, taste and adjust seasoning. Serve with cooked brown or white rice and some hot sauce.
