In their simplest form, palmiers are just shaped and cut sheets of puff pastry rolled in sugar. But why stop there, especially if you're in pursuit of The Best?

By using a mix of sugars, some salt, and spice, you'll get great flavor and texture for almost no additional effort.

Roll both sides of your puff in the sugar/spice misture. Fold as shown: 1/2 way in towards the center, then all the way in, then over.

Then slice and place, cut sides up, on parchment-lined sheet pans. They don't look impressive, do they? Don't worry, because the magic happens in the oven!

After about 20 minutes in the oven, this is what you get. Wow, look at that puff! Cool on racks until they are crisp and cool. And then, start munching.
