The onion soup mix is not strictly necessary, but it does provide deeper flavor. I suggest subs for most ingredients in the full post.

Control the texture of the jam by how you cut the onions. Finely dice for jam with a consistent texture, or slice them for a rustic texture. Or, pulse in a food processor to smooth it out.

This jam is made in 3 stages: 1)Cook onions in fat. 2)Add seasonings & water. Simmer to soften onions infuse flavor 3)Add sugar, vinegar, & Worcestershire. Cook down to concentrate flavors.

This recipe makes about 1 1/4 cups of jam. Scale up or down as needed. It will keep for a couple of weeks in the fridge. See the next slide for some serving suggestions.
