Control the texture of the jam by how you cut the onions.
Finely dice for jam with a consistent texture, or slice them for a rustic texture.
Or, pulse in a food processor to smooth it out.
This jam is made in 3 stages:1)Cook onions in fat.2)Add seasonings & water. Simmer to soften onions infuse flavor3)Add sugar, vinegar, & Worcestershire. Cook down to concentrate flavors.
This recipe makes about 1 1/4 cups of jam. Scale up or down as needed.
It will keep for a couple of weeks in the fridge.
