The Best Lemon Curd Recipe

Fancy lemon curd

The procedure is the same for both versions: cook lemon juice, zest, sugar, salt, and eggs until thick, then strain into a bowl with butter (and white chocolate and creme fraiche)

It's very important to strain the curd so it is as silky-smooth as possible. The strainer will catch errant bits of egg and lemon zest.

Pour the finished curd into jars and keep in the fridge for up to a week. Dip fruit in it, spread it on biscuits, scones, or pancakes. You'll find many ways to use lemon curd!
