How to Make Spicy Bacon Jam
Here's what you'll need to make this delicious jam.
Partially cook bacon and pour off most of the fat. Add the onion, and cook until softened. Pour off almost all of the remaining bacon fat.
Add honey, spices, vinegar, garlic, and espresso powder. Simmer until the onions are deeply caramelized.
Once the jam is thick and syrupy, transfer to a food processor. Pulse until you like the texture. You can make it smooth or leave it with more texture.
I love to spread some bacon jam on a breakfast sandwich. It's also great on burgers or served as part of a cheese board.
Cook bacon for a few minutes to render fat. To remove most fat, cook bacon and onions together until onions are soft. Chill and scoop off fat. Play with spices you like and make it your own.
