Spiced Pumpkin Caramel Sauce Recipe

pastrychefonline.com

Here's what you'll need to make this delicious sauce, friends:

You can use either a combination of your favorite "fall spices" or use a pre-made pumpkin pie spice.

Control the texture of the sauce in 2 ways: 1)take the sugar to a deep caramel for a thicker sauce 2)boil gently for a few minutes after making so it reduces and thickens.

Start by cooking sugar together with water and salt. Once the sugar begins to color, swirl the pan so it cooks evenly.

Once the sugar gets to a deep caramel color, stop the cooking by immediately adding the cream and removing the pan from the heat.

Then whisk in canned pumpkin puree (or homemade) and spices until nice and smooth. To ensure a thick sauce after cooling, gently boil it for 3-5 minutes after all ingredients are added.

Once cool, spread the sauce on top of cheesecake for a lovely fall twist. You can serve it over ice cream, stir it into coffee, or whip it into plain frosting to ice pumpkin cupcakes or spice cake.
