We had this dish years ago at a restaurant. We loved it so much, we've been making it ever since.It's a great recipe to serve as part of a cheese board along with jams, chutneys, spreads, and fruit.
You'll also need a baguette (or more than one). Slice it on the bias so the slices have more surface area, or slice straight across for smaller slices.
Broil the slices until browned on both sides. Watch them carefully, because they can burn quickly!You can also toast them in a toaster oven if you'd rather.
Whisk together the oil with the salt, pepper, and garlic.
Place the goat cheese in an oven-safe dish and pour the oil mixture over all. Broil on low (or bake at 425F).
Brush the browned crostini with as much or as little of the flavored oil from the baking dish as you like. I like a lot of oil, so I'm very liberal with it!
Serve the soft goat cheese spread onto the toasted baguette. You can serve it plain or with any number of condiments. In this photo, I used tomato jam.
