Grilled burgers are all about juiciness, but a smashed burger is all about crispy edges and caramelized flavors.

Stir 1/2 cup mayonnaise together with 2 Tablespoons Worcestershire sauce and as much freshly ground black pepper as you like.

Top each patty with a slice of cheese. Or put cheese on half. Your call.
Add 1/4 of the onions to half the cheese-topped patties.
Stack a cheese-topped patty on a cheese-and-onion topped patty.
Spread a little sauce on the bottom bun.
Top with bacon and then your double burger-cheese-onion stack.
Add a little more sauce and put on the top bun.
Wrap finished burgers in foil so the buns steam.
Give them about 2 minutes for the buns to soften and the whole burger to kind of marry together.
Then dig on in!
