Shredded Applesauce Chicken Sliders with Brussels Sprouts and Apple Slaw from The Speckled Palate. Erin seems to be the queen of having the flavors she cooks the meat with also make an appearance in the topping. So smart, and it makes for such a unified flavor profile! These little sliders seem just about perfect, and with the textural contrast of the slaw, you really can’t lose.
Southwest Steak Stir-Fry from Comfortably Domestic. I desperately need to figure out a way to put more vegetables into my life. And Kirsten has helped me out a lot right here! I love Asian flavors, but I really love Mexican and Tex-Mex flavors, so this stir fry is perfect for me. I bet it will be a hit at your house too.
Easy Indian Vegan Chickpea Curry from Pook’s Pantry. My all-time favorite cuisine in the universe is Indian food. Hands down. I’m making this. And I’ll probably add meat and leave out the cauliflower because I’m grown and I can. Cheryl gives you permission to add meat, and you could even remove some of the curry before adding meat to please both your vegan friends and your omnivorous friends!
Coconut Chicken Tenders from Comfortably Domestic. Give me a chicken tender and some honey mustard out as a sports bar, and I will contentedly dip-eat-dip-eat-dip-eat, concentrating on the deliciousness rather than on the game. Because food > sports. Kirsten has turned my comfort dipping food into amazing homemade (better) dipping food! And the dip? Orange marmalade sauce. So, yeah. Kirsten’s tenders > sports bar tenders.
Spicy Smoked Pimento Cheese from me. Friday meals should be easy and fun. Some folks have pizza. Some folks have fish and chips. Me? Pimento cheese is about my speed. You can put it on a sandwich for grilled cheese, you can just eat it on crackers, dip vegetables in it, or you can even stir it into hot pasta for a quick, easy, and super creamy mac and cheese. Everyone should have at least one or two great pimento cheese recipes in their arsenals. Everyone.
Vinegar Pie from me. I know vinegar pie sounds weird, but in its defense: a)it is very tasty–sort of like a light citrus pie, b)it only contains 5 ingredients (not counting the crust), so yay for that, and c)Laura Ingalls’s mom–yes, half-pint’s mom–used to make this pie inside their little house on the prairie. Go for it, friends. Easy + few ingredients + tasty = win.
Bourbon Pecan Brownies from The Speckled Palate. So, this is how they make brownies in Texas. Let’s all go there and never ever leave.
