Enjoy this Mujadara with Roasted Tomatoes and Greens for Meatless Monday! Susan from the Wimpy Vegetarian has whipped up a flavorful Moroccan spin on rice and beans with this lovely rice and lentil dish accented with roasted balsamic tomatoes and watercress. What a way to start the week!
I grew up eating this casserole at home and at church suppers. It was one of my mom’s signature dishes, gleaned from the pages of a magazine or cookbook back in the early 1970s. Originally made with tomato soup, I’ve modified Casserole Supreme and now make it with ground beef, tomatoes, sour cream and cream cheese. It is the most comforting casserole on the planet, and it freezes well too. Enjoy this on Tuesday or put it in your back pocket for whenever you’re in need of some comfort!
What is easier than a sheet pan dinner? Not much! Scatter on veggies, seasoning and your meat (or leave it meatless), and roast away. Roasted Chicken and Vegetables Sheet Pan Supper from Pook’s Pantry is basically a recipe template for how to make a fast meal from whatever meats and vegetables you have laying around in the fridge. Thursday brings this simple and spring-like pasta dish from The Chef Next Door. Bucatini with Spinach Pesto can hit the table in just about the time it takes to boil the pasta. Sarah uses bucatini (my favorite long shape. Yay!), but feel free to sub in any long shape. Whiz up the pesto in the food processor while the pasta cooks, and voila: dinner!
I’m kind of in love with these Al Pastor Pork Stuffed Sweet Potatoes from Girl in the Little Red Kitchen. An hour in the pressure cooker/instant pot (or a few hours in a slow cooker if you’re more of a planner), and this Whole30-friendly meal is done. Happy Friday!
Our first Extra this week is this gorgeous Asparagus Gribiche from The Wimpy Vegetarian is perfect as a side dish or an a light brunch entree. Think of gribiche as homemade mayonnaise made with cooked rather than raw egg yolks. Rich and wonderful, and a lovely complement to the asparagus. Enjoy!
Last, but certainly not least, Kirsten of Comfortably Domestic is hooking us up with beverages all week long. Make some of her Homemade Lemonade Concentrate at the beginning of the week, and you’ll be able to make a gallon of lemonade, or a glass at a time. Sweet! And tangy. Huzzah!
