Welcome to this week’s edition of the Dinner Divas weekly meal plan, friend! You will find this week’s menu decidedly Meat Heavy, and that’s because we’re all celebrating Burger Month! Hooray! So, lots of burgers to choose from along with Friday Night Pizza Night and two fancy, desserty extras. Let’s get to it!
Bacon Goat Cheese Burger with Pepper Jam from Pook’s Pantry. This burger, with it’s sweet-hot jelly crowning creamy goat cheese? Not to mention the burger AND the bacon? I am dead with wanting this.
Cowboy Tumbleweed Burger from Comfortably Domestic. Any time a friend can put chorizo into a burger, I’m all over it. And that’s what Kirsten has done, friends. Chorizo and ground beef patty, with Cowboy fixin’s. Yes, please.
Smashed Reuben Burger from me. This is my entry into this month’s Burger Month festivities, you guys. The unofficial name? When Burger Met Deli. “I’ll have what she’s having!” (Please comment and let me know you get this joke. It can’t only be me!)
Barbecue Chicken Burger Bites with Avocado Slaw from The Speckled Palate. Erin has a bit lighter burger for us (and I guess we all need it by this time, right?) They’re sliders, so smaller, plus they’re made with chicken. But, man, are they packing some serious flavor! Between the barbecue chicken, the zingy slaw and the sharp dressing, just reading the ingredient list makes me do a little dance! And do go and read her post–you can see an adorable photo of her dog!
Patatas Bravas Hash Brown Crust Pizza from Pook’s Pantry. Pizza night this week is lightened up in the form of a gluten free, deeply crunchy and satisfying hash brown crust. Add whatever toppings you like, or go with Cheryl’s combo of manchego, serrano ham, and scallions. Nice!
Roasted Strawberry Rhubarb Ice Cream from Comfortably Domestic. Favorite late springtime pie, meet new favorite springtime ice cream. That is all.
Peanut Butter Marshmallow Cake from me. This fancy looking cake isn’t too hard to make–honest! You can make the magical marshmallow layer up to a week in advance. Form it in a cake pan and then use the peanut butter Swiss buttercream to sandwich it between two layers of white cake. Tada!
