Thursday’s meal cools things off a bit with this Curried Chicken Salad from me! After I made this, a British friend told me that it’s called Coronation Chicken, and it was a dish created to celebrate the coronation of Queen Elizabeth II. Whatever you call it, it is delicious tucked into pita, piled onto a sandwich, or served all lady-like on lettuce leaves.
Look what Susan made! The Girl in the Little Red Kitchen has outdone herself with these Corn Cakes with Shrimp and Tomatoes. Elegant little stacks of goodness with Mexican flair, and if you check your spices and cornmeal, you can make this a gluten-free meal.
By now, I hope you know that The Extras are my favorites! You never know what you’re going to get. This week, we get a crazy decadent milkshake and a lovely Bundt cake. Huzzah!
