It’s amazing how quickly Friday rolls around, and here we are again, the Dinner Divas, ready with your weekly meal plan. This week the theme is dinner salads. And for extras, we have a great potato side salad as well as a juicy cobbler-like dessert that cooks right on the stove top so you don’t have to turn on the oven. Pook’s Pantry starts off the week right with this flavorful Thai Chicken Salad with Spicy Chili Lime Dressing. And as a bonus, you don’t even have to turn on the oven to roast the chicken. Just grab a rotisserie chicken and go to town. Hooray!
I am kind of in love with Comfortably Domestic’s Chef Salad in a Jar. Full of meat, eggs, and cheese along with a Parmesan vinaigrette, this is one salad that won’t let you down. And if you make it just the way Kirsten tells you to, it will stay fresh in the fridge for days until you bust them out to toss in a picnic basket, in a lunch box, or just to take them out on the deck for Dinner al Fresco on a Tuesday night.
This salad right here? This is the one I grew up on, and it is still my favorite. I call it Mom-Style Macaroni Salad, because it’s not fancy enough to be called pasta salad. I make mine with a bunch of tuna and cheese in it, so as far as I’m concerned, it counts as dinner. Give it a try.
This spicy chicken avocado salad couldn’t be easier to put together. It starts with a salad kit, so hooray for convenience. To that, you add some chicken cooked with Mexican spices, cut up some avocado, and drizzle on the included dressing. Nice! And now it’s time for our extras. First up, The Girl in the Little Red Kitchen does it again, this time with this Green Goddess Potato Salad. Mixed fingerlings get tossed with a fresh and herbal, Greek yogurt-based dressing. This salad will be right at home next to a burger, a steak, seafood or chicken. And you can never have too many potato salad recipes.
And every menu needs at least one dessert, right? This Cherry Blueberry Slump is a close cousin of the cobbler, but it cooks on the stove top so the dumplings steam instead of bake. This makes for a cooler kitchen since you don’t have to turn on your oven. And that is a sweet ending, especially in the summer!
