Soft, Cheesy Rolls with a Secret Ingredient

Idahoan Instant Potatoes are the secret ingredient! Choose your favorite flavor.  The cheese flavors will make your rolls that much cheesier!

Here's what you'll need to make these soft cheese rolls. Please see the next slide for measurements.

– 13.5 oz whole milk – 2 oz butter – 2.5 oz Idahoan® Potatoes (your favorite flavor) – 1 egg – 1 tsp salt – 4 oz sharp cheddar cheese – 20 oz all-purpose flour – 2 tsp yeast

Ingredients

Heat milk and butter together until the butter melts and the milk is hot. You could also do this step in a pot on the stove top.

Put the milk and butter in your mixer bowl. Add instant potatoes, egg, and salt.  Whisk to combine. It will be soupy!

Grate the cheese, and dump it on top of the potato mixture. Add the flour and yeast and mix with the dough hook.

Mix slowly until a shaggy dough forms. Then, knead on medium speed until the dough is smooth, shiny, and stretchy.

This is what your dough will look like when it's done.  Be patient. It could take 8-10 minutes of kneading to get it to this stage. You can see the bacon bits in my "loaded potato" version!

Gather the dough into a ball and let it rise, covered, in a warm place until doubled, about 1-1 1/2 hours. Then gently press out all the gases.

Scale the dough into 18 equal pieces, and shape each one into a ball. Watch that technique here. Use both hands. I only used one so you could see better!

Place the rounds into your baking pan, and let rise in a warm place until puffy before baking until golden brown and beautiful.
