After your dough rises, press out the gases and roll it into a huge rectangle, about 20" across and 15" deep. I promise this dough is a dream to work with!
Mix all the filling ingredients together evenly with a spatula, a hand mixer, or a clean hand. Then spread it on the prepared dough in an even layer. Then roll him up!
I find it easiest to slice the rolls evenly using dental floss. You can also use a sharp serrated blad to cut the uneven ends off and cut the remaining dough into 12 rolls.
Give the rolls an overnight rest in the fridge (or not), and then let them rise until the sides are touching all around. Then bake until golden-brown and delicious.
Make a very thick glaze and spread it on the rolls as soon as they come out of the oven. That allows some of the glaze to melt down into the coils of the buns.
