Chicken and Sausage Gumbo
Erin says this is Louisiana comfort food, and I believe her. Why should they have all the fun, though? Work on your roux-making skills (watch Erin's video) and make some Louisiana comfort of your own!
Pesto, Shrimp and Zoodles
For those of you longing for spring, these springy zoodles with shrimp and pesto from My Imperfect Kitchen will fill the bill nicely.

The Best Homemade Chicken Noodle Soup
Homemade noodles (don't be intimidated--they are not hard to make!) swimming in rich chicken broth with white meat chicken and simple vegetables. Yes, please. So delicious, and so comforting!
Spicy Chicken Guacamole Sandwich or Sliders with Sabra
Y'all, this sandwich is super delicious! You can make them larger as a meal, or make them as sliders for snacking. Either way, I'm pretty sure you need these: marinated chicken breast with guacamole, red onion, and pepper jack. I had it at a restaurant once and had to make them at home. It was a good call on my part!
Butterscotch Hard Candy Recipe
Butterscotch doesn't have any Mardi Gras connotations, but man is it good. Perfect, crunchy butterscotch is easy to make and super easy to eat.
Cream Cheese and Raspberry King Cake

Because we all need more purple, gold, and green in our lives! Erin lives in Texas where she can buy King Cake, yet she makes them. Because they are *that* good!
