This week is split up about half and half between health and comfort. And a couple of our recipes do double duty as healthy and comforting.

Hello, gorgeous winter salad to start off our week! My Imperfect Kitchen brings us this beauty: Winter Pear Salad with Hazelnuts. With crisp fennel as the greens, sweet/mellow pears, some sharpness from parm, and that indescribable crunch and nuttiness from hazelnuts, this salad is sure to perk up your taste buds on a cold winters’ day!
Remember when I said healthy and comforting? This is it right here! Pook’s Pantry brings us this Easy Lentil Soup, and I want it. Chopping up some vegetables is the most challenging part of this soup, so it really is easy to make. Plus, it makes a lot so you can enjoy soup for a couple of dinners and/or lunches!
Crispy Black Bean Burritos are making me so happy and hungry. More healthy/comfort for you. Black beans, brown rice, and cheddar make up the filling for these vegetarian beauties, and the most irresistible thing about them for me is that crispy tortilla. Yum!
I’m not so sure about the healthy part for these Fried Chicken Cutlets with Herb Gravy, but yowza, they bring both The Delicious and The Comfort. Chicken breasts pounded flat and coated in seasoned bread crumbs pan-fried in olive oil and butter with a generous amount of shallot-y, creamy gravy. Yes. You want this. You do.
Friday night pizza night! Yay! Put a fun spin, literally, on this Friday tradition with The Speckled Palate’s Pepperoni Pizza Rolls. Starting with store-bought pizza dough brings this meal together in a snap. Yes.
If any of you guys are on a Whole30 or considering giving Whole30 a go, take it from me: you’re going to need Whole30-approved ketchup. And even if you’re not on Whole 30, try your hand at making this smoky, spicy ketchup. It is good on all the things. All of them.
Oh, man, The Speckled Palate is killing me this week, first with those pizza rolls and now with this magical beverage! This grown up Pomegranate White Hot Chocolate is based on pomegranate juice with white chocolate melted into it. This thrills me, because I often find white chocolate cloyingly sweet. Erin achieves a lovely balance and a not-to-sweet drink with this combination. Huzzah!
