Welcome to our 89th weekly meal plan, friends! We all hope you had a wonderful Christmas and are looking forward to celebrating the new year with some delicious food. It’s all about balance, so we have lots to choose from from Whole 30 to vegan to no-particular-diet-plan-at-all. Enjoy!
Langostino Mac and Cheese with Bacon and Chives from Pook’s Pantry. Buttery seafood, the sharp salty, meaty bite of bacon, the slight chew of the pasta. A symphony. You’re going to want to get in on this one from my sissy!
Chicken Cordon Bleu from Comfortably Domestic. A classic for a good reason, you guys. Chicken breast rolled around ham and cheese, breaded and baked in buttery goodness. Comfort food of the highest order, and take that 45 minutes or so they’re in the oven to do pretty much whatever you want!
Double Polar Burger with Everything from me. I have shared this in Dinner Divas before, but really. Who doesn’t want to eat like Danny Zuko in Grease?! And there is nothing like a good burger!
Whole30 Slow Cooker Pork Carnitas from The Speckled Palate. Carnitas are one of life’s wonderful pleasures. Crispy on the outside, soft and tender on the inside and wonderful served in a multitude of ways. Keep it Whole 30 by serving them over cauliflower rice or with sweet potato hash as Erin has done, or throw caution to the wind and make a carnitas burrito. So wonderful!
Lucy’s Sticky Ham Sandwiches from My Imperfect Kitchen. These little beauties are very similar to my very favorite ham sandwiches in all the world with the addition of a touch of brown sugar (hello!) and with fewer poppy seeds. Sara heard about this recipe from Lucy’s daughter, cookbook author Siri Daly, author of Siriously Delicious. I love a recipe with a family story.
Peppermint Brownie Brittle from me. Y’all, if you’re a fan of the storebought kind, I am here to tell you: you can make homemade brownie brittle! And it is delicious AND it makes a ton! This version is peppermint, but you can pretty much make any flavor you want!
Vegan Orange Cranberry Muffins from The Speckled Palate. Orange and cranberry is a power couple, and vegans and omnivores alike will love the combination–along with vanilla–in these gorgeous muffins!
