Once again, the weekly meal plan has come around again on the guitar, y’all! Before Christmas prep kicks into high gear, we’re lightening things up just a bit–nothing too crazy! The mains are mostly meaty, but we do have a lovely vegetarian stuffed squash. For extras, some homemade rolls and beautiful, herbed shortbread cookies. Let’s get to it, shall we?
Pulled Pork Coleslaw Eggrolls from The Speckled Palate. These are simply genius, y’all. Cabbage plays a big role in traditional eggroll filling, and Erin has southerned them up by using coleslaw. And since coleslaw and pulled pork are a match made in heaven, these are the perfect South meets East fusion food!
Vegetarian Stuffed Acorn Squash from Pook’s Pantry. Healthy and hearty, Cheryl stuffs these squash with quinoa and spinach. Not only are they vegetarian, they’re also gluten free. Nice!
PF Chang’s Lettuce Wraps from Comfortably Domestic. Now you don’t have to go out to enjoy these delicious little smackerels. PF Chang’s lettuce wraps are super popular for a good reason: they’re super good. Sweet, salty, savory, and make-at-home-able. Perfect!
Good Luck Soup from me. This lovely soup is full of flavor and also full of all the ingredients that symbolize good luck in the new year, so definitely keep this one on hand for your New Year’s Day meal. But make it now, too. Your Instant Pot will make short work of the cook time, too!
Chicken with Maple Mustard Sauce from Jessica Gavin. Chicken thighs–my favorite for meals like this–take center stage here with sweet potatoes, green beans, and a tangy maple mustard sauce as backing vocals. Yes please!
Garlic Parmesan Dinner Rolls from me. These rolls are simply the best, and you should make them. Seriously.
Ginger Rosemary Shortbread Cookies from The Speckled Palate. I love the subtle flavors in these not-too-sweet shortbread cookies. Perfect for dessert or as a little pick me up with a cup of coffee, crumbly shortbread always satisfies me–I bet you’ll love Erin’s version!
