Happy Thanksgiving leftovers and Happy weekly meal plan, friends! This week, we have some fun ways to use up leftovers as well as more seasonal goodness for your menu planning needs. Nothing takes too long to make, and most are actually really fast. All, as usual, are delicious and will make your family happy! Let’s get to it, shall we?
Sweet Potato Veggie Cakes from Pook’s Pantry. Sissy is the queen of veggie cakes. For summer, try her zucchini ones, and stick with these sweet potato ones for fall. Look at those crispy edges! Yum!
Turkey Biscuit Casserole from Comfortably Domestic. A wonderful way to use up Thanksgiving leftovers, this comforting casserole from my friend Kirsten hits the spot!
Thanksgiving Shepherd’s Pie with Stuffing Crust from me. Here’s the way I like to use up our Thanksgiving leftovers: I put everything into a crust made out of leftover stuffing, top the whole thing with mashed potatoes, and voila. Leftover turkey shepherd’s pie! Tada!
Sweet Potato Bisque from The Speckled Palate. This silky, sexy, seasonal soup from Erin can be made Whole30 compliant, paleo or even vegan. Something for everyone here!
Creamy Butternut Squash Pasta from Jessica Gavin. With butternut squash’s brilliant orange color and mellow sweetness, it’s a no brainer to turn it into a pasta sauce, and Jessica does it with style with a healthy does of shallot, some non-dairy milk, and freshly shaved Parm. Easty to prepare and easy to enjoy.
Apple Chutney Bruschetta from Pook’s Pantry. Goat cheese with sweet-sour apple chutney? I would never stop eating these if I made them. Wonderful!
Caramel Apple Pie from Comfortably Domestic. This is definitely the exclamation mark at the end of this post, y’all. I mean, look at that guy! Please make one. Please.
And that brings us to the end of our weekly meal plan, friends.
What will you be making?
I hope you all had the most wonderful Thanksgiving. See you soon.
Take care, and have a lovely day.
