It’s weekly meal plan time, friends. This week, we’re about comfort with a side of Halloween. You in? Let’s get those shopping lists out, y’all!
Our warm-to-hot weather has broken and we have had a succession of cooler days with even a few chilly nights. I am in heaven. But just because I like my outsides to be cool doesn’t mean I like a cold tummy. The Dinner Divas come through this week with all sorts of recipes to warm you down to your toes!
Slow Cooker Chipotle Turkey Pumpkin Chili from Pook’s Pantry. Those flavors! Those garnishes! And since it’s made in a slow cooker, you know the work is minimal while the flavor payoff is big. Yes.
Chicken Satay with Coconut Rice (Nut-Free!) from Comfortably Domestic. For those of you who cannot have peanuts, Kirsten’s version of chicken satay has Zero Nuts. It comes together quickly and is yet another recipe to put in your “copycat favorite take out dishes” folder. Yum!
Southern Chicken and Dumplings from me. All I have to say about these, aside from that they are comforting and wonderful, is that I used bacon fat in the dumplings. So, yeah.
Chicken Spaetzle Soup from The Speckled Palate. This soup is making me long for a rainy day where I don’t have to do anything except curl up with a book, maybe watch some Netflix, and eat this hearty version of classic chicken noodle soup. If you’ve never had spaetzle, you are in for a chewy, comforting, delicious treat!
Indian Lamb and Potato Stew from Country Cleaver. Have mercy, y’all. Indian food is my hands down favorite food in all the world. And I love a good lamb stew. I am all over this one with its wonderful Indian spicing, gorgeous comforting color and huge flavor. Gimme!
Pumpkin Empanadas from Pook’s Pantry. Start with refrigerated empanada dough and you’ll have these little guys ready in no time, for dessert, for a snack with a cup of coffee, or even to tuck into a lunchbox for a Halloween-y treat.
Apple Cheddar Bacon Scones from Comfortably Domestic. This flavor combination has Got Me, y’all. If you’ve never had savory scones, you should revisit them right now. Yes please.
