French Onion Risotto from The Speckled Palate. I often say there are no words needed. This is one of those times. Talk about a one-two comfort food punch, you guys. Comfort squared from Erin. Yum!
Red Wine Braised Short Rib Recipe from Pook’s Pantry. This is another dish that magically happens in your oven in a cast iron casserole or Dutch oven. Tough short ribs come out meltingly tender. Nothing better on a cold night.
Chipotle Chicken Enchiladas with Roasted Butternut Squash and Black Beans from Country Cleaver. Seriously. You had me at Chipotle Chicken Enchiladas, Megan. The roasted butternut and black beans definitely seal the deal. Lord.
Malted Milk Ball Spider Cookies from me. These cookies are the best chocolate chip cookies ever (thanks, BraveTart), made over for Halloween with chopped malted milk balls in the dough and cute little googly eyed malted milk ball spiders on top. Super cute for the kids and also seriously tasty for all!
Crispy Taco-Spiced Chickpeas from The Speckled Palate. It’s a good thing these guys are pretty healthy y’all! If you’ve never had roasted chickpeas before, you need to remedy that, stat. Addictively crunchy and delicious!
