It’s Weekly Meal Plan time, friends!
This week, we’re offering a bit heartier fare than in recent weeks. We’re all thinking about cooler weather, so we have 2 burgers and a gorgeous pork roulade for you. And since it’s still warm in many parts of the country (okay, hot!), we have 2 salads: a quinoa-based one and a sexy watermelon salad. And our extras are perfect for tucking into a lunchbox, enjoying with a cup of coffee, or serving for dessert.

Bacon Goat Cheese Burgers with Pepper Jelly from Pook’s Pantry. Start off your week with big flavor, friends. I would make this just for the peach pepper jelly alone. Lord!
Rosemary Pesto Pork Roulade from Comfortably Domestic. So many flavors going on in this roulade, friends. Spinach, gouda and thinly sliced apples all rolled up in a pesto-rubbed, butterflied tenderloin. Learn this technique, and you can make your roulade with whatever fillings you have in your fridge. But start with this, because the flavors here are wonderful.
Smashed Reuben Burger from me. Love a Reuben but are leaning towards having a burger? Smashed Reuben Burger to the rescue! You’re welcome.
Summer Quinoa Salad from The Speckled Palate. A quinoa base with Romaine, chicken, feta, avocado and more, all tossed in a homemade vinaigrette. You’ll want to make this one, for sure. Leave the avocado off for meal planning and then add it individually on the day you want to have it, or serve it family-style for dinner one evening. Winner.
Spicy Watermelon Salad with Tequila Dressing from My Imperfect Kitchen. This salad has it all: watermelon, goat cheese, all the tomatoes, crunchy pepitas, a kicky aioli as dressing. Turn it into a hearty dinner salad by adding some shrimp or chicken, or leave it as-is. Either way, you can’t really go wrong with this taco-inspired salad from Sara!
Vanilla Cupcakes with Strawberry Cream Cheese Frosting from Pook’s Pantry. Summer perfection. White cupcakes, creamy strawberry frosting–kids and adults will both love these little gems Cheryl whipped up!
White Chocolate Raspberry Scones from Comfortably Domestic. Scones. Somehow they sound so much fancier than the American biscuit. But don’t be fooled–they’re not hard to make. And the flavor payoff of raspberry and white chocolate? Yeah, make these for breakfast or brunch. They freeze well, too, so you know. Stock up!
