This week finds us whipping out our Instant Pots, making the most of summer vegetables, and feasting on Hatch chiles. Our extras bring a fun breakfast idea and a delicious adult beverage. Let’s get to it, shall we?
Summer Vegetable Gratin Casserole from Comfortably Domestic. An explosion of fresh vegetables in a creamy, cheesy sauce. Yes, please. Yes indeed.
Keto Instant Pot Crack Chicken from me. High fat, low carb, full-on delicious. Quick to make in your Instant Pot or othe pressure cooker, and it makes a ton. So there.
Pear BBQ Pulled Pork Sandwiches with Pear Slaw from The Speckled Palate. Erin puts a lovely spin on the pork and apple combo by using pears. I’m loving the combination of flavors and textures here!
Hatch Chile and Chicken Skillet Dinner from My Imperfect Kitchen. This dish comes together quickly when you use leftover rice and cooked chicken–if you have a rotisserie chicken lying around, this’d be a great use for it. And while I’m here, let me just confess I’ve never had a Hatch chile, ever. There is a Hatch chile-shaped hole inside me just waiting to be filled. This goodness will do very nicely.
Instant Pot Split Pea Soup with Ham from Pook’s Pantry. Slow cooked flavor in just about an instant. Split pea soup is so comforting, and it makes me think of fall. Maybe making this soup will tell fall to hurry up already. Because I’m ready. Cheryl also provides alternative directions if you want to make a vegetarian or vegan version. Nice!
Hawaiian Roll French Toast Muffins from me. If you love French toast, you are really going to love these portion-perfect muffins. One Hawaiian roll per muffin tin cavity, tasty custard, and a streusel top. Perfect for breakfast or brunch!
Peach Moscow Mules from The Speckled Palate. Peachy, gingery, refreshing. The perfect summer beverage. And if you don’t drink alcohol, you can make it a mocktail. Lovely.
