Hello, weekly meal plan for Week 70! This week, we’re still keeping the kitchen cool by taking the cooking outside, using our Instant Pots, or just plain not cooking anything at all (hi, salads!)
Mexican Pasta Salad with Green Goddess dressing from me. A lovely way to start off Meatless Monday, the pasta salad is tangy with lime and tomatillo in the dressing and packed with goodness. Make a ton and eat it all week long. Such a great salad!
Grilled BBQ Chicken Flatbread from The Speckled Palate. I definitely want to take a bite out of this chicken and vegetable-packed flatbread!
Instant Pot Spaghetti and Meatballs from My Imperfect Kitchen. Use premade meatballs, and your Instant Pot will make quick work of this dish: 5 minutes! Frozen meatballs, still only 10 minutes. Dinner on the table in under 30 minutes. I’ll take it!
Moroccan Chicken Meal Prep Bowls from Pook’s Pantry. So much deliciousness here, with a bright, lemony vinaigrette to pour over all. Make these and win at meal prep!
Strawberry Mango Salad with Strawberry Poppy Seed Dressing from Comfortably Domestic. We are eating a lot of what I like to refer to as Big Ass Salads these days. This one shall go in the rotation, for sure. Love all the summery flavors!
Israeli Salad from Pook’s Pantry. Cukes, tomatoes, peppers, and more swim happily in a zesty vinaigrette. The perfect side for end-of-summer days. Yum!
Mocha Cappuccino Ice Cream Pie from Comfortably Domestic. OREO crust. Coffee ice cream. Chocolate chips. Whipped cream. All the drizzles. A perfectly lovely no-bake Extra for our summer sweet tooths. Teeths?
