Pizza Quesadillas from My Imperfect Kitchen. How fun are these? All the pizza toppings you could want, along with melty, melty cheese, turned into a quick cooking quesadilla. Ready so quickly your kitchen won’t have time to heat up!
Pimento Cheese Potato Salad from Pook’s Pantry. I’m not sure there is really anything else that needs to be said here. Pimento cheese and potato salad. Together in one dish. The stuff of this Southern girl’s dreams!
Slow Cooker BBQ Pulled Pork from Comfortably Domestic. As much as I love to cook, when it’s hot and sticky outside, I’d just as soon allow an appliance to do most of the work. Topped with zingy slaw, these sammiches are good for what ails you.
Low Carb Lasagna from me. I know, I know. This is a winter dish, right? Well, yeah, but I will say that the cauliflower noodles I made added more flavor than traditional noodles (because I could season them however I liked). If you’re eating low carb, each serving is about 7 carbs and 100% delicious. And lighter than traditional lasagna. Seriously, keto people, jump on this low carb lasagna!
Whole 30 Zucchini Taco Boats from The Speckled Palate. We did a Whole30 back in April, and it was great. The hardest part was keeping our dishes creative. Enter, Erin’s recipe for zucchini taco boats! Super low in carbs and high in vegetable goodness, you can have taco night any night, hold the tortillas!
Fresh Blueberry Bourbon BBQ Sauce from Pook’s Pantry. Your chicken and pork are waiting for you to make this. Or use it as a glaze for grilled fruit. How about that? Yes.
No-Bake Lemon Mousse Tart with Pretzel Crust from Comfortably Domestic. Kirsten finishes off our week of goodness with this no-bake tart that is the very essence of summer. Light and lemony, nestled in a crust that’s just salty enough, and crowned with all the berries. Yes to a gorgeous, refreshing no-bake summer dessert!
