Welcome to our weekly meal plan for Week 66, courtesy of The Dinner Divas! This week we have more summery goodness for you including salads, sliders, cupcakes and that Southern summer staple, pimento cheese. So get those lists ready and be prepared for a week of easy to make, tasty goodness!
Greek Bruschetta from The Speckled Palate. There’s not much more refreshing than the flavor combination in a Greek Salad–and that’s while you’ll see two different spins on a classic this week. Erin has turned Greek Salad into a bruschetta topping. I love her suggestion of spreading the crostini with hummus or tzatziki. To that, I say yes and yes.
Thai Turkey Meatballs with Peanut Sauce from Pook’s Pantry. Make a bunch of these little green curry-sauced guys and eat them all week long. Ready in about 30 minutes, you can eat them with zoodles or rice noodles, over rice, or on their own. Nice!
Chicken Greek Salad from Comfortably Domestic. Kirsten’s spin on a Greek salad turns it into a main course with the addition of juicy chicken. Plus, pickled beets and her recipe for homemade restaurant style Greek dressing!
Summer Tomato Peach Panzanella from me. I play up the sweet-savory goodness of peaches by pairing them with tomatoes in a classic panzanella. Add in some fresh corn, and this salad is the essence of summer.
Turkey Shishito Burgers from My Imperfect Kitchen. Fridays should be easy. Slider easy. Add onions, celery, shishitos, and cheese to your ground turkey for a flavorful burger to tuck into a mini bun or two. Yum!
Chocolate Covered Raspberry Cupcakes from The Speckled Palate. Party-worthy cupcakes, you guys. Even if you don’t have a special occasion, make these because you’re worth it. And who doesn’t feel special when eating a cupcake?
Spicy Smoked Pimento Cheese from me. I would never sit down and eat an entire pound of cheese. But shred it up and turn it into pimento cheese, and all bets are off! If you’ve never had pimento cheese, I implore you to make this. If you’ve loved pimento cheese forever, please try this spicy version. You can eat it cold or hot. Use it as a dip for vegetables. Stuff it into burgers. Make it into a grilled cheese. Eat it on crackers. Make it!
