Welcome to our Dinner Divas Weekly Meal Plan post for Week 65! And while 65 if often the Age of Retirement, the divas are just getting started!
We have a great summer menu for you this week: dinner salads, side salads, a wicked burger (I mean that in the best way), and some spicy homemade ketchup for all your ketchuping needs. You ready? Let’s get to it.
Dill Caprese Bruschetta from me. Marinate cherry tomatoes and fresh mozzarella in dill-spiked dressing, pour over garlic-rubbed, toasted crusty bread, and a cooling Meatless Monday dinner is served!
Sweet Heat Burger from Comfortably Domestic. Keep the heat outside and on this burger! All I need to know about this burger is Candied Bacon and Pepper Jelly. I’m all in!
Nectarine Blue Cheese Spinach Salad from Pook’s Pantry. A lovely salad to pair with an easy grille protein, the combo of sweet nectarines and salty-sharp blue cheese is pretty irresistible. Yes.
Avocado and Panko-Crusted Chicken Cobb Salad from The Speckled Palate. I have nothing to add here. I love a good Cobb Salad. I’m all over this one. Nice!
Fig, Pear and Gorgonzola Grilled Cheese from My Imperfect Kitchen. How about an easy-yet-fancy grown up grilled cheese on a sunny Friday evening? If you are lucky enough to have a fig tree in your yard, this is a no brainer. Again, there’s that sweet-salty-sharp combo. Hard to beat.
Watermelon Cucumber Salad with Feta, Lime, and Mint from Comfortably Domestic. Just reading the recipe title, I can taste this. Refreshing any day of the week.
Spicy Whole 30 Ketchup from me. In this instance, Whole 30 just means that there are no “non-compliant” ingredients in this ketchup. Namely, added sugar. I used date syrup to sweeten this just a bit. It’s rich and thick and is just what a burger needs. The recipe makes about 2 cups, and it’ll last in the fridge for 2-3 weeks, easy.
