Welcome to Week 62 of our weekly meal plan posts. The Dinner Divas have summer on our minds, and we figure you do too. So this week, we have burgers as well as cooling summer salads and two pies! Two! Let’s get to it!
Tomato & Goat Cheese Tart from Pook’s Pantry. Not only is this a gorgeous tart, it’s also a shining example of food as love, when we feed people who are hurting. Please go read Cheryl’s beautiful post and make this deliciousness for people you love.
Feta Stuffed Lamb Burgers with Grilled Sweet Onion Steaks from Comfortably Domestic. The sweet smokiness of the onion, the sharp richness of the feta-stuffed lamb burgers, the meaty earthiness of tomato. Yeah.
Mexican Green Goddess Salad from me. This salad gets its creaminess from avocado, so it’s perfect to feed to your vegan and vegetarian friends. I use fish sauce in it, so that’s right out for vegan/vegetarian folks, but you can leave it out or sub in a bit of coconut aminos or soy sauce. For you omnivores out there, consider adding some diced poached chicken or a can of tuna. Good stuff!
Sauerkraut Burgers with Oven-Fried Pickles and Sweet Sriracha Sauce from The Speckled Palate. I have recently discovered that I like sauerkraut, so I’m all over this burger. It’s like Erin knows that I will always choose fried pickles for an appetizer and that I always have sriracha in the fridge. My burger. Mine.
Thai Chicken Salad with Spicy Chili Lime Dressing from Pook’s Pantry. This summer salad from my Sissy is long on texture and flavor and short on oven time. Use a rotisserie chicken, and grab your food processor to do most of the shredding and chopping, and you are in business.
You know I love me some extras, and this week we have not one but TWO pies for you. Huzzah!
Sweet Cherry Rhubarb Pie from Comfortably Domestic. Strawberry Rhubarb might be the southern go-to flavor combination, but up in Traverse City, Michigan, where cherries are abundant, cherry rhubarb is the way to go. Let fellow Diva, friend, and pie maven Kirsten show you how it’s done.
Chocolate Cheese Pie from my brother and me. This pie is very special to my family and me. It was always my brother Greg’s choice of birthday dessert, and now that he is gone, I make it every year in his honor. And also because it is delicious. Chocolate Graham cracker crust, vanilla cheesecake, an easy homemade fudge sauce, and sweetened sour cream combine to make one rich, glorious bite after another.
