Week 60 of our weekly meal plan posts is here already, friends! Seems like it comes around once every 7 days ago or so. Weird.
Anyway, we have a great lineup for you this week–very summery stuff! Stuffed tomatoes, a yummy-saucy chicken dish, a couple of sandwiches, a gorgeous big ass salad, and two kinds of cookies! Gourmet BLT with Cheddar and Avocado from me. You like a good BLT? With thick bacon and the very best of ingredients? This guy is for you, then.
Mustard Chicken from The Speckled Palate. I love a good, saucy chicken dish. Erin says we should serve this with bread for sopping up all the sauce. This seems like a very excellent plan!
Stuffed Summer Tomatoes, Two Ways from Pook’s Pantry. Yes, friends. Two ways! A Greek-inspired twist as well as crab-stuffed ‘maters. Cheryl knows what she is doing. You should follow her lead!
Grilled Steak Salad with Chive Yogurt Dressing from Comfortably Domestic. All the vegetables and all the meat, all dressed with a zippy lime yogurt dressing. Yes, indeed.
Spicy Chicken Guacamole Sandwiches from me. You can make these as sliders or as impressively large subs. Either way, this is my take on the Chicken Guacamole Sandwich from Mimi’s Cafe. And it is fantastic. Enjoy!
Funfetti Cookies (from scratch) from The Speckled Palate. I have seen the kind of funfetti cookies where you use a cake mix. These are not those. These are the kind that are slightly soft and chewy that you take to a baby shower. Save the cake mix cookies for pool snacks, maybe. Or make these and elevate that pool snack. Yum.
Big Chocolate Chip Cookies from Comfortably Domestic. Kirsten says these are awesomer than regular chocolate chip cookies because they are bigger. It is hard to argue with that logic. Plus, if you love a chewy cookie, these will be right up your alley!
