It is time yet again for the Dinner Divas weekly meal plan post. This week, the menu leans to the lighter side with 2 summery salads, breakfast for dinner, a meatball sub, and extras of a wonderful sweet-spicy jam and a Tempting French toast casserole. Let’s get to it.
Meatball Hoagie Sandwich from Comfortably Domestic. Beef and pork meatballs simmered in marinara with melty smoky cheese. Let’s do this.
Beef Cheek Tacos with Cabbage from me. Do not fear beef cheeks, friends. It’s a tough cut but super flavorful once braised down. Find it at your local Latin market. Do the marinating and braising on the weekend, and then all you’ll have to do on Tuesday is reheat the meat, lightly toast your tortillas in a hot skillet, and assemble. I recently reposted this old recipe to include directions for cooking the meat in your Instant Pot. That’ll save a ton of time, but you still need to let the meat marinate overnight before cooking. Plan ahead. It’s worth it!
Blueberry Pecan Feta Salad from The Speckled Palate. Erin’s beautiful salad features fresh blueberries and a homemade blueberry vinaigrette. I’m totally adding some sliced rotisserie chicken and calling this dinner for a night or three!
Spinach, Nectarine, and Blue Cheese Salad from Pook’s Pantry. Cheryl’s salad flavors have me all Anticipatory! And the fig vinaigrette? Fig balsamic is the best, so this dressing is on my list too. Make those lists, friends!
Whole Wheat English Muffins from me. I made these English muffins using sprouted wheat flour, which is a nice alternative to regular whole wheat flour since it has a much more mellow flavor. Either way, these muffins aren’t hard to make and are sure to be the hit of your breakfast-for-dinner bar (I just made that up). And enjoy leftovers toasted with butter and jam the next day.
Peach Pepper Jam with Hatch Chilies from Pook’s Pantry. This jam makes my heart sing. I can see this as an addition to everything from fish, chicken and pork to adding a judicious amount to homemade pimento cheese. And as pictured. Because jam over cream cheese is magic.
Chocolate Raspberry Overnight French Toast Casserole from The Speckled Palate. Behold. Now make. I’ll meet you in the kitchen.
