Oh Friday, how I love you. Not only do you mark the start of the weekend, but you are also the day we get to post our Dinner Divas weekly meal plan post. I am always so impressed with my fellow divas’ recipes, and I think, taken as a whole, we really provide folks with excellent dinner (and extras) possibilities! Take this week, for example. Whether the recipes are from our archives and our photos aren’t spectacular, or whether they’re newer recipes with beautiful photos (we are all learning and improving all the time), the recipes are solid, creative, and most importantly, they work. Enjoy this week’s offerings, and as always, check out our archives to get all the goodness in one place!
Mashed Potato Beef Hand Pies from The Speckled Palate. Pure comfort wrapped up in more comfort. To start out the week, Erin has shared a slam dunk. Enjoy!
Lighter Chicken Stroganoff from Comfortably Domestic. More comfort! Oh, happy day! I am in love with this week, you guys. If you’re a stroganoff fan and think it’s too heavy for spring, Kirsten has you covered with this lighter chicken version. Thanks, Kirsten!
Chicken Taco Salad with Crispy Tortilla Strips and Avocado Buttermilk Dressing from Pook’s Pantry. All the color! All the flavor! Seriously, you guys. The recipe name is long, and the goodness goes a long way in this healthy, hearty salad from my Sissy, Cheryl.
Lamb Meatballs with Tzatziki Sauce (and make a salad to go with) from me. Remember when I said some of our recipes from our archives are less than spectacular? Well, this is an example from little me. Make these little lamby meatballs, dip them in tzatziki, and eat them with a salad and it’s dinner. Or serve them in a bowl for your next cocktail party. They’re Very yummy if a bit humble looking in this photo.
Thanksgiving Turkey Biscuits and Gravy from The Speckled Palate. Okay, so Erin starts us off with comfort and ends the week with more comfort. Biscuits and gravy are The Best, and her holiday turkey version is calling my name. How about you?
Y’all know the extras are my favorite! Let’s get to it.
Carrot Cake with Ginger Cream Cheese Frosting from Comfortably Domestic. Well, this sounds just about perfect. And that’s all I have to say about that. Thank you, Kirsten, for making a ginger frosting to go with this carrot cake!
Buttery Mini Brioche Buns from me. These are a great cooler-weather weekend project. The dough takes forever to rise because it is super rich, but man are they worth it. Make the dough in the evening. Portion into muffin tins and refrigerate overnight. The next day, pull them out and let them S-L-O-W-L-Y rise on the counter until about doubled before baking them off. So good with jam or cut in half horizontally for slider buns. Enjoy!
And now we have come to the end of our meal plan post. It was a good one, wasn’t it?
From all the divas, we wish you delicious and quick-to-prepare dinners and all the extras your hearts desire.
Thanks for spending some time with us today. Take care, and have a lovely day. (And don’t forget the archives)
