Hi, and welcome back to another edition of the Dinner Divas Weekly meal plan posts, where we offer easy and delicious real food recipes to make your weekly menu planning easier! First, welcome to our newest Diva, Erin from The Speckled Palate. You’ll find her first recipe on “Thursday,” and you are going to dig it. Erin is filling in for Susan from Girl in the Little Red Kitchen, and we hope she’ll stay on even when Susan is back on her feet again! Welcome, Erin!
As always, feel free to poke around in the archives to find all our meal plans all in one place. And then get ready for some Very Tasty Recipes!
Moroccan Chicken Meal Prep Bowls from Pook’s Pantry. Start the week off right–even on Sunday if you’re not watching a Certain Football Game–and enjoy this healthy, flavorful chicken meal for dinner and also have some prepared to take in your lunch. Double win from Cheryl!
Hasselback Stuffed Chicken from Comfortably Domestic. Sometimes I don’t feel the need to offer a description, because the picture speaks for itself. This is one of those times. I will tell you that the stuffing is artichoke hearts, sundried tomatoes and All The Cheese. Yeah, write that down, and get to the store, stat.
The Best Poppy Seed Party Ham Biscuits from me. Okay, so technically this isn’t dinner food. It’s more of a heavy appetizer/game day food. And you can absolutely make these for your Super Bowl Party. But, on more than several occasions, we’ve made a meal out of a few of these guys and a nice bowl of soup. Just saying. You do what you want.
Apple Cider Pulled Pork with Apple Cabbage Slaw from The Speckled Palate. See? Here’s Erin’s recipe! You can make this in your slow cooker or in your Instant Pot if you’d rather. Pork butt simmered in spiced apple cider until fall-apart tender, pulled, and then served on buns with apple cabbage slaw with yogurt dressing? Yeah. We’re glad you’ve joined us, Erin!
Sausage Stir Fry from Comfortably Domestic. Delicious, delicious sausage plus all the vegetables, all served over your choice of grain. The ingredient list is short, and so is prep time. And because the meat is sausage it pretty much seasons the dish as it cooks. A nice quick, healthy dinner for a Friday night, or any night!
Devil’s Food Cupcakes with Mint Buttercream from Pook’s Pantry. I am a chocolate and mint fan, for sure, so I am all over these little gems from my Sissy! Deep, chocolatey cupcakes with creme de menthe buttercream garnished with shaved Andes Candies. I love them!
Real Coffee Butterscotch Ice Cream Sauce from me. If you think you don’t like butterscotch, I submit to you you have never had real butterscotch. Not the weird boxes of pudding full of chemicals or the jars of “butterscotch sauce” without a hint of molasses. No friends, true butterscotch is a perfect melding of butter, sugar, molasses, and salt. And in this case, coffee. It’s great on most ice cream, it’s nice and thick with a more-ish chew, and you’ll have to heat it up to thin it out enough to pour. Yeah!
And that concluded this 42nd week of our meal plan posts, friends. I do hope you’ll go visit everyone and collect all the recipes! And don’t forget the archives.
Thank you for spending some time with Divas.
Take care, and have a lovely day.
