Homemade Paneer/Paneer Tikka Masala from me. Wait! Before you go over to this recipe, let me prepare you. The ingredient list is long. Like even long-for-me! I don’t suggest you make your own paneer and your own sauce for a weeknight. But do give this a go when you have a long weekend stretched out before you. You will not be sorry.
For a weeknight meal, pick up some paneer at an Asian grocery along with some (affiliate link) tikka masala simmer sauce and make a tasty and satisfying quickie version. Cut the paneer into cubes, give it a quick soak in some yogurt spiked with curry powder as an easy shortcut, saute it up in a little ghee, and then pour the simmer sauce over. Simmer for a few, and then serve with rice. Perfection!
One Pot Chicken Pasta with Creamy Sun-Dried Tomato Sauce from Pook’s Pantry. Perfectly warming for a chilly night, ready in under 30 minutes, chicken plus Parmesan plus pureed sundried tomatoes plus pasta. Nothing wrong with this! Oh, and spinach, so healthy!
Smoky Chipotle Beef Chili from The Chef Next Door. Man, I love a good bowl of chili. I like Sarah’s take here, loaded with ground beef, vegetables, and some smoky heat from chipotle powder. Chipotle powder is one of my favorite shortcut ways to get lovely spicy-smoky-slow-cooked flavor. Heck, I even sprinkle it on my popcorn. So I’m all over this one!
Italian Sausage and Peppers Burger from Pook’s Pantry. Who doesn’t love a good burger? This one will get your burger loving heart racing. With a patty that’s half ground beef and half Italian sausage, the goodness of provolone, and a generous topping of tomato-y peppers-n-onions. You want this. I want this. Let’s make burgers!
Baked Chicken Parmesan from Comfortably Domestic. A classic. Made with juicy breaded and baked chicken thighs, this chicken parm is going to be your new go-to.
Blueberry Lemongrass Pound Cake from me. I developed this recipe to honor my friend Nancie McDermott, a cookbook author who has two specialties: Thai food and southern food. So of course, I took a cue from Thailand with coconut milk infused with lemongrass for the liquid and the southern classic combo of lemon and blueberry. This cake is straight up “Southern Thai,” and you’re going to love it!
Gingerbread Cupcakes with Orange Buttercream Frosting from The Chef Next Door. I generally think of lemon as the traditional citrus accompaniment to gingerbread, but I am really liking Sarah’s orange spin. And who doesn’t want a good cupcake to enjoy for dessert or with a cup of coffee?
